What are the different types of pork chops?

Whether you’re shopping for bone-in or boneless, there are a lot of different names for pork chops, but only a handful of different cuts. All come from the loin, a long stretch of meat at the center of a hog’s back. These are the main types:

  • Ribeye chops, cut from the rib section of a pork loin, have a large “eye” of loin with a little fat around it, and are also sold as rib chops. 

  • Pork loin chops look a little like T-bone steaks. On one side of the bone you’ll find part of the loin muscle, and on the other a smaller section of lean pork tenderloin. Also known as porterhouse chops, they have less fat than rib chops.

  • Center cut pork chops, also known as top loin, New York chops, or an America’s Cut, come from the part of the loin closer to the head. They’re boneless, lean, and fast-cooking. 

  • Sirloin pork chops come from near the hip. If you don’t cook them carefully, they get tough and dry. 

  • Blade pork chops are cut from the other end of the loin, near the shoulder. They have more fat than rib or loin chops, and can be tough. You may also see these labeled as blade steaks or pork shoulder steaks.


How to cook pork chops

For quick weeknight dinners, try pan-fried, grilled, baked, or even air fryer pork chops. (To get them golden brown in a hurry, pat your chops dry with paper towels before seasoning.) If you have more time, take a leisurely approach by braising them in a crock pot or the oven. Whichever method you use, cook time will vary depending on how thick-cut your chops are. 

To be sure the pork is cooked through, use a meat thermometer (such as the Yummly Smart Thermometer). Remove the pork from the heat when it reaches an internal temperature of 145°F, and let the chops sit for a few minutes before serving — even if the meat looks a little pink in the center, if you’ve hit the minimum temperature you’re good to go.


What to serve with pork chops
