    I followed the recipe exactly and it was delicious! I used a salad spinner to remove some of the water from the fresh picked zucchini. I toast the walnuts for 8 minutes, chop them and add them to the batter. Note: I froze some of the shredded zucchini with two cups in a vacuum sealed bag for the next time I make it.

    Great with or without the nuts! if you dont have medium loaf pans this works to make one large loaf for 15 ish min more of baking

    I have an abundance of zucchini from my garden. So I used this recipe to feed my family, loved ones, and neighbors.. AWESOME, easy, and wonderful recipe. I did add 2 tablespoons of applesauce to my moist ingredients and mixed in.... Fabulous recipe and a with all recipients... Thank you 😘

    This is a super recipe! I only changed one thing....by accident....thought I had a zucchini...I had a long, skinny eggplant! The bread still turned out wonderful! My husband had a good laugh, and ate every bit of it! The bread was moist and wonderful! Will try it next time with zucchini!
