    This is a great recipe! I did scale down the cinnamon to 1 tsp, though. And used 2 cups instead of 2.25 cups, also 5 eggs (instead of 4) to make it more moist due to my altitude (elevation over 6,000).

    Turned out great! I replaced one cup of zucchini with carrots. I did have to cook longer than the time specified, but I didn't dry my zucchini and my oven sucks... 😂
