This rustic turkey sausage soup is filled with Hillshire Farm® Turkey Smoked Sausage, red bell peppers, turnip greens, corn, beans and orzo.

- 1 pkg. Hillshire Farm® Turkey Smoked Sausage
- 1 Tbsp. butter
- 1 cup shallots (chopped)
- 1 red bell pepper (large, seeded and cut into ½” pieces)
- 8 cups fresh turnip greens (chopped)
- 2 cups whole kernel yellow corn (frozen)
- 15.5 oz. Great Northern beans (rinsed, drained)
- 8 cups low sodium vegetable broth
- 1/2 tsp. cayenne pepper
- 3/4 cup uncooked orzo pasta

Directions
- Cut sausage into ¼” slices. Melt butter in 5-6 quart pan or stockpot over medium-high heat. Cook sausage, shallots and red bell pepper, stirring occasionally until sausage is lightly browned, about 3-4 minutes.
- Add turnip greens and cook, stirring gently until greens wilt, about 3 minutes. Stir in corn, beans, vegetable broth and cayenne pepper. Bring to a boil.
- Stir in orzo pasta. Return soup to a boil, reduce heat to medium-low, cover and cook 30 minutes

Cheap and easy to make. The cayenne pepper was the perfect addition. The whole family loved it and they generally don’t like soups.

This soup is delicious, healthy, easy to make and inexpensive! I couldn’t find turnip greens so I substituted kale and served it with a nice crusty multigrain bread...awesome! 😋
