- 1 Tbsp. salt
- 1/2 tsp. black pepper
- 1 tsp. dried thyme
- 1 tsp. garlic powder
- 2 Tbsp. Dijon mustard

Directions
- Preheat the oven to 350°F.
- Line a roasting pan with heavy-duty aluminum foil and position a roasting rack inside of it.
- Pat the pork loin dry with paper towels, and season it liberally on all sides with salt, black pepper, dried thyme, and garlic powder. Use the back of a spoon to spread the Dijon mustard in an even layer over the surface of the meat.
