One can of beans wasn’t enough but this is otherwise great! Super flavorful and the chicken will be great for sandwiches in a couple days when I’m tired of chili.

I did a lot of substituting. I cubed the chicken before I found the recipe, I had no chicken broth so I used vegetable broth, and I had no white beans so I used garbazo beans. I thought it tasted salty enough so I skipped the added salt and pepper. But the oregano, cumin, and chili powder gave it a great flavor.... A the whole thing was so quick and easy. Five stars is for “wow” dishes. But this will probably become a quick dinner staple.

Use rotisserie chicken!!
Add in 4oz of diced jalapeños for added spicy-ness
Add in 1/2 tsp of cayenne for even more heat!
Love this recipe, it’s excellent on its own or as a base.

Very delicious! I subbed 1# of ground white turkey for the chicken breasts. Was worried the meat wouldn’t be enough but it was. I added a 15oz can of black beans with the can of white beans. I added dried 1/2 t cilantro along with the other spices. I didn’t have the canned green chilies so I substituted a 10oz can of Ro-tel mild diced tomatoes & green chilies. I brought the chili to a boil and then a simmer for about a half hour. We offered chopped onion, diced green pepper, jalapeños, sour cream and shredded cheese.... as extra topping choices just before serving. My hubby says it’s the BEST chili he has ever had! We will definitely make this yummy chili again. :-)

We loved this! So read the comments and since so many said it was bland I added the spices while cooking the chicken. I added smoked paprika, a full can of Chile’s 7 ounces and doubled the beans as well. If you season 5 min before serving you won’t have much flavor I used 2 chicken breasts and 3 thighs as well.

Kind of bland but yummy. Added hot sauce to taste. And used whole grain tortilla chips.

A bit bland. Better after doubling the beans and adding (to taste) white ground pepper, coriander, soy sauce, lime juice, Tony Sachery, cumin, paprika. Had to use more than the recipe states but after adding and tasting, adding and tasting and adding and tasting some more, it turned out great!

i made it with 2 cans of cannelli beans instead of just one. It was quite ite a bit thinner than I wanted, so I simmered it a long timeto thicken it up. I also tripled the garlic. it was tasty.

Both my husband and i enjoyed this recipe. So simple to make. I used great northern beans and chicken broth because i had them on hand. Not sure if substituting those items make a difference in the taste but although i enjoyed it, i think it needed a bit more spices. Overall, still a delicious recipe.

Turned out great I added 30 more oz of beans, corn and a little more jalapeño for spice but my family loves it... also cooked chicken in crock pot alone over night shredded perfect

This was delicious! I added an extra can of white beans to bulk it up and instead of 4 medium chicken breasts, I used 2 large. I may do a little less next time, it was a lot of chicken and would be easier on my grocery budget 😉

Amazing! We will definitely be making this easy dinner again. We found it helpful to remove the chicken from the instant pot before shredding then adding it back in

With some modifications, I was able to use ground turkey as a replacement. If anyone reads this, and you want to save the hassle of shredding chicken, this is for you.

Excellent flavor, simple recipe, and straightforward directions! Easy dish to leave in the slow cooker overnight to allow the flavors to deepen. A few updates I made in my version: shredded rotisserie chicken instead of chicken breasts and I doubled the amount of beans. The fresh oregano added at the end was delightful and I cracked fresh peppercorns into my bowl upon serving.

Turned out excellent. I used chicken thighs also (since it’s my family’s preference) and was just as delicious. This is now a staple in our house.

I forgot the fresh oregeno so it needed a pinch of color but the taste was awesome
