- 2 Tbsp. olive oil (the recipe called for 2 T, but I think you could use less)
- 1/4 cup diced red onion (finely, could also use regular onion)
- 1 Tbsp. ginger root (finely minced, I wouldn't use ginger from a jar for this dish)
- 2 tsp. jalapeno (finely minced, I used pickled jalapenos which worked fine. Increase if you want it spicy.)
- salt (to taste, I used about 1/2 tsp. sea salt)
- 1 tsp. chile powder
- 1 cup chicken stock (chicken broth from a can is fine)
- 1/2 cup chunky peanut butter (use natural peanut butter without added sugar for South Beach Diet)
- 2 Tbsp. tomato paste
- 1 Tbsp. cider vinegar
- 3 cups cooked chicken (diced, use white meat or carefully remove fat from dark meat for South Beach Diet)
- ground black pepper (fresh, to taste)
- 4 green onions (scallions thinly sliced)

I really liked this. I thought the peanut and ginger flavors really came through, and didn’t want any extra spices getting in the way. My husband thought it was one dimensional - hot but without much flavor. He wanted curry powder or something in it.

We served with white rice, which was delicious but no longer carb friendly.

It was pretty good, my husband loved it! I was pleased with how spicy it was but since we're not eating rice (which would temper the heat), I wish I would've added a vegetable like cauliflower. In the end, I added 1 Tbsp of brown sugar and served it with 1 oz of goat cheese. Delicious!

It is really delicious and satisfying, but I thought the flavor needed to be ramped up. Swapped out half the chili powder with Cumin powder. I put in 1/2 a red onion, added minced garlic, a diced chipotle pepper, and chopped green beans to the sauté. I sprinkled a little sriracha on top.
