- 2 cups zucchini (chopped, I used local Mexican Zucchini)
- 1 scallion (scant cup of, whites)
- 1 garlic clove (minced)
- jalapeños
- 2 chilies
- 1 red bell pepper (remove stem & seeds chopped)
- 1 green bell pepper (remove stem and seeds chopped)
- 1/2 red onion (chopped)
- 3 Tbsp. butter
- 10 twists sea salt (fresh ground)
- 10 twists ground black pepper (fresh)
- 9 whole eggs
- 4 cups nonfat milk (Usually when I use a lot of cheese or butter I try to balance with nonfat milk)
- 8 oz. pepper jack cheese (shredded)
- 8 oz. sharp cheddar cheese (shredded)
- 10 oz. cheese bread (jalapeño, cut up, I purchased from Sprouts It’s spicy with jalapeño)
- 5.5 oz. corn tortillas (torn up)
- 1/2 tsp. kosher salt
- 1/4 tsp. ground black pepper
