- 100 grams rice vermicelli noodles (dried)
- 6 leaves cos lettuce (or other similar lettuce)
- 1 carrot
- 1 cucumber (small, I usually use a lebanese cucumber)
- 1 tomato
- 2 spring onions
- 1 handful mint (optional)
- 1 handful roasted cashews (or peanuts - optional)
- 2 chicken (serves protein of choice e.g., tofu, beef, tempeh)
- 3 Tbsp. crunchy peanut butter
- 1 Tbsp. tamari soy sauce
- 1 Tbsp. rice wine vinegar
- 1 Tbsp. maple syrup

I used tofu as my protein, replaced maple syrup with honey and didn’t use mint or nuts (besides peanut butter). I would do it differently next time. The sauce consistency was too thick so it didn’t mix well with the noodles. The rice vinegar is too strong for my liking so I’d reduce a bit, or add in more maple syrup or peanut butter.
An otherwise easy dish to put together.
Not sure whether to eat with chopsticks or a fork.
