- 80 grams breadcrumbs (fresh white)
- 1 egg (lightly beaten)
- 1/4 cup Dijon mustard
- 60 grams unsalted butter
- 400 grams wild mushrooms (mixed, we used Swiss brown, pine and chestnut)
- 1/2 tsp. smoked paprika (sweet)
- 1 Tbsp. tomato paste (each, and plain flour)
- 400 mL beef (consommé or beef stock)
- 1/3 cup brandy
- 150 grams sour cream
- 400 grams tagliatelle
- 1 Tbsp. poppyseeds
- 2 Tbsp. flat leaf parsley leaves (chopped)
