- 1 cup sweet corn
- 1 can sweet yellow corn
- 1 Tbsp. sugar
- 1 tsp. salt
- 2 Tbsp. flour
- 1/2 cup water
- 1/2 cup milk
- butter
- cheddar cheese (or mozzarella cheese, sliced)

Directions
- Blend corn, sugar, salt, flour, water, and milk in a blender except for the butter and cheese. Let stand approximately 3 minutes in the blender, and then blend again.
- Place a small amount of butter in a skillet on medium heat and pour the batter into the skillet to form pancakes. Each pancake will take 3 minutes to cook on each side until golden brown.
- Serve with cheese, folding each pancake in half and placing the cheese in the middle.

2 stars as the recipe is written. There isn’t nearly enough flour just a runny mess in a pan.
I added way more flour to thicken it up.
I would delete the sugar and add more salt, and save some corn un blended so it has a bit more texture

i didn't like the consistency as i was flipping these so i added a lot more flour. bad idea! just play with the heat on the stove but don't add too much flour as it took away from the sweet corn flavor. next time i would like to try adding the cheese while it's cooking.
