I used Cajun spiced beans and their cooking liquid leftover from another recipe. Left out the vegetable broth. Otherwise followed the recipe. It was delicious. It’s going on the rotation.

Really good!
I added way more rice and cheese than it called for as well as spices (garlic salt, onion powder, chili powder etc)
Next time I’d probably just use two black beans as I don’t like pinto that much. Could also add ground beef if you wanted with taco seasoning

It turned out well! Despite all the spices the flavor wasn't very developed, but it was still a very easy and healthy-tasting dinner to make. The several servings that it provided is nice for meal prepping!

This is a very filling dish and moderately tasty. I had to use a 3 quart baking dish, instead of the 2.5 QT as recommended. I also used a dallop of sour cream for each serving.

Picture perfect! This was an amazing recipe! Placing the cheese on at the end over the surface gives a golden brown exterior that makes me hungry to dig in!

It turned out great! I cooked my own brown rice & black beans & red bell pepper instead of green. Will definitely make again but will probably add some salsa to spice it up.

This was super yummy. I switched the vegetable stock for a cup of mild red enchilada sauce to give it some zest. I think next time I’m going to add some fried polenta cubes to give it a tamale pie feel. Husband is a tough sell on vegetarian dishes, but he really liked this

This was great. I made a few minor changes just because. Added a tsp Ground Jalapeño, a fresh tomato, and once done an avocado and sour cream. Keeping this for real!! Also fresh corn was great!

This was a quick and easy dinner recipe. Flavor was okay but it definitely could have used more vegetables and seasonings. If I make again I’d also add more beans as the dish was mainly rice. Topped with homemade salsa and sour cream.

I modified this recipe to make it plant based, which means I used nondairy cheese. It was okay, more tweaking needs to be done to improve it.

Used brown rice and quinoa instead for more protein and I can roasted tomatoes along with the other ingredients. Soooo good.

Didn’t read the instructions until I started it - “serve with your favourite toppings!” Didn’t have any in, but can see how it’d best be served with a topping of some sort as it’s a little dry. Very tasty though - worth a go!

Easy, heathy, and delicious! Also, very re-eatable! I can eat this for lunch several times over the week without getting too tired of it.

My husband's verdict was "really good." I added ground turkey this time (made it as written last time) and added about half a jar of mild salsa instead of the vegetable broth. An easily customizable recipe for sure. I felt it needed more flavour than it had as written, though.
