Description
Vegetable Chow Mein is quick to put together, just chopping up all those vegetables perfectly is the hard task for everyone. Well all that chopping is worth it considering the soft and tasty noodles flavored with wonderful sauce. Choosing the right kind of noodles and cooking them a little under done is the key to get that perfect Chow Mein. This is not really the Indo-Chinese street version of what we get in India but more to the Chinese version of it.

- 8 oz. noodles (fresh or dried)
- 1/2 cup french beans (thinly sliced in diagonal cut)
- 2 carrots (julienne or thinly sliced)
- 1 stalk celery (finely chopped)
- 2 green onions (thinly sliced and separate green as well as white part)
- 1 bell pepper (/capsicum, thinly sliced [use any color you want])
- 1 cup cabbage (finely shredded)
- 1/4 tsp. Chinese five spice powder
- 1 Tbsp. hoisin sauce
- 2 Tbsp. soy sauce
- 1 Tbsp. vinegar
- 1/4 cup vegetable stock (low sodium)
- 1/8 tsp. freshly ground black pepper (powder)
- 1 Tbsp. chili sauce (adjust depending on how spicy you want it)
- 1 inch ginger (grated/finely chopped)
- 4 garlic cloves (grated/finely chopped)
- 3 Tbsp. sesame oil (or regular oil)
- salt (to taste)

Directions
- Bring a large pot of salted water to a boil over high heat. Add the noodles and cook as per instructions on the package, keep them a little under done as they will cook in the wok too later. Drain and rinse with cold water. Drizzle a tablespoon of sesame/regular oil and coat the noodles well.
- In a large nonstick skillet/wok, heat the 2 to 3 tablespoon sesame/regular oil over high heat. Add ginger and garlic, saute for 20-30 seconds then add the white chopped part of green onions and saute for 30 seconds. Now add beans and carrot first, saute for 2 minutes. Add celery and bell pepper, cook for another 1-2 minutes.
- Throw in soy sauce, Chinese 5 spice powder, black pepper powder, red chili sauce, hoisin sauce, soy sauce, vinegar and vegetable broth. Add the cabbage, mix well and bring the mixture to a boil. Stir until slightly reduced and thick, about 2 minutes. Add the noodles and mix well until they are well coated with the sauce. Check for seasoning. Add the green onions.
- Transfer the chow mein to a large bowl and garnish with the green onions before serving.

Absolutely delicious will defiantly be making again, I added a fresh chilli and some palm sugar to balance the flavor.
