- 14 oz. extra firm tofu (or firm, drained and pressed to remove most of the moisture)
- 1 Tbsp. sesame oil
- 1 Tbsp. soy sauce (low-sodium is fine)
- 2 tsp. rice vinegar (not seasoned)
- 2 tsp. agave nectar (or sweetener of your choice)
- 1/2 tsp. ginger root (ground, from a jar)
- 2 Tbsp. peanut butter (plain, use natural peanut butter without added sugar for South Beach Diet)
- 1 Tbsp. hot water
- 2 Tbsp. rice vinegar (not seasoned)
- 2 Tbsp. agave nectar (or sweetener of your choice)
- 2 tsp. sesame oil
- 1 Tbsp. soy sauce
- 1 tsp. Sriracha (more or less to taste; this was just barely spicy)
- sauce (If you think you'll want extra, you may want to double this; it keeps well in the fridge and is good on lots of other things.)
- 1/2 head red cabbage (thinly sliced and then chopped)
- 1 red bell pepper (large, sliced into short thin strips)
- 1 1/2 cups sugar snap peas (thinly sliced, cut lengthwise on the diagonal)
- veggies (You can substitute or add any thinly sliced, you think would be good with these flavors)

Really delicious! I added 1 table spoon of siracha, still barely spicy. I also added mango and corn for additional sweetness! Also ate with jasmine rice on the suggestion of other who made the dish. It was delish!

Definitely a do-again dinner
I made mine a full meal with pad Thai noodles, frozen stir fry veggie mix, and cilantro to garnish

This was delicious! I used fresh ginger in the marinade and added it to the sauce as well. I used sugar in place of the agave syrup. Can’t wait to make it again!
