- 1 can jackfruit (young, in water or brine,drained & shredded with a potato masher and a fork)

- 2 veggie sausage (cut into slices, I usedfield roast)
- 1/2 cup unbleached white flour
- 1 Tbsp. Cajun seasoning
- 1 tsp. dried thyme
- 1 tsp. paprika
- 2 garlic cloves (minced)
- 1 yellow onion (medium, finely chopped, I used a food processor)
- 1/2 green pepper (finely chopped, I used a food processor)
- 2 celery stalks (chopped, I used a food processor)
- 2 vegetable bouillon cube (or no-chicken, no-beef, dissolved in 3¾ cups water)
- 1 3/4 cups crushed tomatoes
- 1 1/2 cups okra (sliced)
- 1 bay leaf
- 1/2 tsp. salt
- handfuls parsley (chopped)
- 2 cups cooked rice
- pepper (to taste)
