Description
This simple turkey salad comes together in just about 20 minutes, perfect for days when you are rushed to make a healthy and filling lunch. Diced turkey breast is mixed with sweet corn, peas, tomatoes, purple onion, and green bell pepper for a meal that has tons of flavor. A bed of crisp and fresh lettuce serves as the base to all the other vibrant vegetables. The basic dressing comes together in no time and is a mixture of ketchup, balsamic vinegar, olive oil, and lime juice which is accented with garlic and mint.
Ingredients
- 250 grams turkey breast (diced)
- 1/2 cup frozen sweet corn
- 1/2 cup frozen peas (defrosted)
- 1 tomato (chopped)
- 3 Tbsp. red onion (finely chopped)
- 1/2 green bell pepper (finely chopped)
- lettuce
- 1 clove garlic (minced)
- 4 peppermint (leaves, minced)
- 1 tsp. ketchup
- 1 Tbsp. balsamic vinegar
- 2 Tbsp. olive oil
- 1/2 tsp. lime juice
Directions
- Place all the ingredients in a salad bowl and toss.
- For the dressing, mix all the ingredients and dress the salad.
- Plate placing a bed of lettuce and the salad ingredients on top. Serve.
