Description
This simple, homey tuna casserole contains all the goods of the classic comfort food meal, including perfectly cooked noodles, a light and creamy sauce, and cheesy topping. Serve the protein-rich and heart-healthy dish alongside a mixed greens salad or sauteed leafy greens for a quick and tasty weeknight meal. - 8 oz. egg noodles
- cooking oil spray (or a little vegetable oil)
- 1 cup finely chopped onion (from about 1/2 large onion)
- 1 cup frozen peas
- 3/4 cup milk (low fat or whole milk)
- 2 cans cream of mushroom soup (reduced-sodium)
- 1 tsp. garlic powder
- 1/4 tsp. crushed red pepper flakes (optional)
- 1/2 tsp. black pepper
- 1/2 tsp. kosher salt
- 2 cans albacore tuna (albacore packed in water; each can is 5 oz.)
- 1/2 cup shredded cheddar cheese
- 3 Tbsp. panko breadcrumbs
- 2 tsp. extra-virgin olive oil
- 2 tsp. chopped fresh parsley (optional)

Directions
- Bring a large, covered pot of water to a boil, then cook noodles according to package directions; drain.
- Meanwhile, preheat oven to 375°F with a rack set in the upper third. Spray a shallow 2 1/2-qt. baking dish (or a 9x13-ish baking dish) with cooking oil spray.
- While noodles are cooking, microwave onion and peas in a microwave-safe bowl until they’re steaming and peas are warm, about 2 minutes. Set aside.

I like it. 2/3rds of my pan is still in the fridge (made it last night). today for lunch I offered a square of tuna casserole to my husband; he said no.😢 He's too darn picky.
