Description
This classic summery salad from southern France is big on fresh flavors and textures, thanks to the just-right homemade vinaigrette, tender potatoes, crunchy cucumbers, and juicy tomatoes. It’s big on nutrients, too, thanks to the veggies, tuna, and eggs. Pair the salad with crusty whole-grain bread for a satisfying meal that’s perfect for lunch or dinner. - 1/2 lb. potatoes (thin-skinned, small regular potatoes or baby potatoes)
- 1/2 lb. green beans
- 5 1/2 Tbsp. extra-virgin olive oil (divided)
- 1/2 tsp. kosher salt (divided)
- 1/2 tsp. black pepper (divided)
- 4 large eggs
- 8 cups butter lettuce (or romaine lettuce, chopped; 6 oz.)
- 1 1/2 cups English cucumber (chopped)
- 6 cherry tomatoes
- 1/4 cup chopped fresh parsley
- 2 garlic cloves
- 2 cans tuna (packed in olive oil, 4 1/2 oz. per can)
- 3 Tbsp. red wine vinegar
- 2 tsp. Dijon mustard
- 1/2 cup pitted kalamata olives (or other black or green olives)

Directions
- Preheat oven to 400°F. Quarter potatoes if they’re larger than baby size. Trim ends from green beans and cut them in half lengthwise (French-style). Put potatoes on a sheet pan, drizzle with 1 Tbsp. olive oil, and sprinkle with 1/4 tsp. each salt and pepper. Using a wide spatula, move potatoes in oil to coat well.
- Roast potatoes for 10 minutes, stirring once. Remove pan from oven. Add green beans, drizzle them with 1/2 Tbsp. olive oil, and gently stir them with the spatula to coat in oil.
- Roast vegetables until potatoes are tender and cooked through, another 10-15 minutes. Once they’re cooked, set pan with vegetables aside to cool to room temperature.
