Description
Tortas del Santuario or Pork Loin Sandwiches are decadent and perfect for a holiday or special occasion. The marinade for the pork loin includes Guajillo chile peppers, garlic cloves, ground black pepper, ground cloves, ground cinnamon, bay leaf, dried oregano, coarse salt, apple cider vinegar, and water. It is a sweet and savory pork sandwich that is topped with refried beans, lettuce, radishes, onion and tomato sauce. Use sourdough bread or a baguette.

- 0.5 kilograms pork loin (with everything and bone)
- 2 guajillo chili peppers (for marinade)
- 1 garlic clove (for marinade)
- 1/4 tsp. ground black pepper (for marinade)
- 1/4 tsp. ground cloves (for marinade)
- tsp. cinnamon (for marinade)
- 1 bay leaf (small, for marinade)
- 1/2 tsp. dried oregano (for marinade)
- 1 tsp. coarse salt (for marinade)
- 1 Tbsp. apple cider vinegar (for marinade)
- refried beans
- lettuce (chopped)
- radishes (chopped)
- pickled onion (onion desflemada)
- bread (birote or telera)
- tomato sauce (to accompany)

Directions
- Put the guajillo chili in hot water and boil for 5 minutes. We turn off the heat and let it rest for 10 minutes in the water, until they are very soft.
- Blend all for marinade ingredients, except the pork, along with 3/4 cup of water. With the resulting marinade, bathe the pork and let it rest overnight, turning occasionally
- The next day, in the cocotte we put the loin together with its marinade, cover and let cook over medium-low heat for 30 minutes. Then we continue cooking, but uncovered for another 20 minutes.
