- 1 clove garlic
- 1 carrot
- 2/3 cup onion
- 480 grams Roma tomatoes
- 1 tsp. Herbes de Provence
- 1/2 tsp. oregano
- salt and ground black pepper

Directions
- Saute the garlic, onion, and carrot in the olive oil in a pan. Cook for 5 minutes on medium heat, stirring frequently until the onion starts to brown.
- Add the tomatoes, Herbes de Provence, and oregano, cover the pot, lower the heat, and let simmer for 10 minutes.
- Remove from heat, set aside for 10 minutes before blending in the blender, adding salt and pepper.
