- 1 pkg. firm tofu (I used a 14-ounce package)
- 1 1/2 Tbsp. vegetable oil
- 2 Tbsp. minced ginger
- 1 Tbsp. minced garlic
- 3 cups green cabbage (shredded, ensure they are no longer than 1-inch pieces)
- 1 large carrot (grated, about 1 1/4 cups)
- 1 pinch salt
- 4 scallions (sliced)

I made this recipe for the first time and it was a hit in my household my husband is total vegan and love it. My twist is that I also added spinach at the end while it was on low simmering 😋
