Delicious! I’m trying to eat healthy and not a fan of brown rice, but I can do this one for sure!

Excellent! My husband and I are vegetarian, so this combined with a salad and fresh bread makes a great meal I wasn’t able to get Basmati rice but will next time but the mahatma was a fine substitute I’ll definitely make this again

Perfect! It was a great combination with the mushrooms and rice. Lasts a while in fridge too. I recommend this as a family meal. I put peas in with the mixture and it tasted really nice.

It was good. For a main course I would add some more veggies - maybe kale.

A little too time consuming for a side dish but tasted good. I used this recipe as inspiration for a simpler version.

I love this recipe and have made it multiple times. I would serve this dish to family and guests. I substituted the vegetable broth with chicken broth and enjoyed it as well. The mushrooms, thyme and parsley just enhances this recipe. It’s a keeper in my recipe box.
