- 1 cup heavy cream (or half and half)
- 1 tsp. dried tarragon
- 1/3 cup kale (can use frozen thawed Kale as well, stems remove and chopped fine)

This soup is wonderful. Great flavor, but lacking in thickness. Next time will purée some of potatoes. Will definitely make this again.

Very tasty soup! I made cashew cream to substitute for the actual cream, and I puréed navy beans to eliminate the flour. The tarragon works well with the potatoes.

I didn’t change anything, other than a sprinkling of cheddar cheese when I served. Very good easy soup that is very comforting

I loved this recipe and my family did too! I used homemade cashew cream instead of milk and it turned out perfect. I did not add the kale because my family is not a fan. Will definitely make again.

Like others, I threw this all in the crockpot. I made the rue first and then added it. I threw spinach in at the end for more veggies. I replaced the heavy cream with half and half. Also used thyme and dill. Very yum!

Tasted great. Subbed thyme instead of tarragon because I didn’t have any and added some red pepper flakes. Would definitely make again!

This is the best potato soup I’ve ever had. The whole family loved it. I substituted thyme for the tarragon. I also doubled the flour and added a 1/2 tsp of cayenne. I don’t like kale, so I left that out. I cooked it in a crockpot on high for 4 hours.

It was very tasty and easy to make. I was especially surprised that the recipe didn't call for any milk and still turned out great. I only used 3c of broth instead of 4c and I used 1/2 cup cream and 1/2 c half-n-half. I also added some brussel sprouts that I cut up because I didn't have any kale but it was good just the same.
