- 1 stalk celery (thinly sliced)
- 2 medium carrots (peeled and julienned)
- 1 cup green beans (frozen or fresh)
- 15 oz. kidney beans (rinsed and drained well)
- 15 oz. white beans (rinsed and drained well)
- 1 medium zucchini (sliced to bite size pieces roughly ½ inch thick)
- 2 tsp. dried oregano
- 2 tsp. dried basil
- 2 Tbsp. fresh parsley (chopped)
- 1/2 cup small shell (shaped or elbow pasta)

Like this recipe a lot! Only a few little tweaks that I made. The dried herbs I added at the beginning with the onion and oil because it helps open up the flavor or herbs/spices more. I use a full 28oz can of tomatoes. I also did half veggie half chicken stock as I’m not a vegetarian and I had chicken bouillon, but not enough veggie broth for the recipe either time. I did add a can of chi chi beans once & didn’t add it the second time, was good both ways.

Delicious!!!! I used two cans of tomatoes, added potatoes and some pepper flakes. I will definitely be making this again.
