- 11.2 oz. Guinness Stout (bottle)
- 5 Tbsp. tomato paste
- 4 cups beef stock
- 4 large carrots (peeled and cut into 1 inch pieces on a diagonal)
- 3 celery stalks (cut into 1/2 inch pieces)
- 2 bay leaves
- 1/2 tsp. dried thyme (or fresh)
- 2 Tbsp. balsamic vinegar
- 1 tsp. sugar

Turned out fantastic. But not my first rodeo with Guinness stew. Adjusted a few things. Delicious and authentic recipe. Note: the flour and water blend that you mix into the stew is called a slurry. A roux is equal amounts of fat and flour and it is cooked to thicken mostly gumbos, but it is the basis for a white sauce and many other sauces.
