We added more coconut milk which made it a little thicker. Also added some veggies.

I couldn't believe how bland it was. I thought I must have missed an ingredient, however, reading the other reviews it seems to be the recipe has no flavor. Super disappointed.

Made a few modifications to give it something extra- used crunchy wonton strips as a topping instead of the peanuts, doubled the curry paste, and added in about 2 1/2 cups frozen stir fry vegetable mix. Be generous with the liquid, as stated it absorbs into the soup very easily.

I didn’t hate it. I added .5 of a tablespoon more of the curry paste but think I should have increased it more. The curry paste was really the only thing that brought flavor into the dish.

This was very good and I'll make it again. Only thing different I did was increase the curry paste amount a little because of some of the comments I read here, but honestly I think it would've been flavorful enough if I hadn't done that :) I sliced up green onions but instead of using as garnish I simmered them in the soup broth.
I used thin rice noodles and simmered them in the soup broth just until tender. Perfect. Yes, once the leftovers sat there for awhile the noodles soaked up much of the broth but that's fine with me. I like it that way as well.

Lovely recipe, if you know how to adjust it. Double the curry paste, add a bit of salt, some veggies (I added corn, julienne cut carrots and some green leaves I had lying around), a source of protein (chicken or prawns work best) and, for the love of god, cook the noodles in another pot and add them directly to the bowl just before serving, otherwise they'll turn into mush in no time.
(the recipe works with yellow curry paste too)

Super disappointing. I followed the recipe and I ended up adding an extra tablespoon of the curry paste because it tasted like absolutely nothing... still tasted so BLAND! I added salt, soy sauce, more lime, and sriracha and it was still tasteless. Trying a new recipe next time; this one was a dud.

It was really good just add a little more curry sauce and we live in istanbul so there is no red curry paste just green curry paste but that worked too!

Loved this. Only problem was that we added the noodles to the pot and ate our servings. It was just the 2 of us so there was still about half left over. When we went back for seconds (because it was THAT good) it was no longer soup!!! Just curry noodles. I think next time I wont add the noodles to the pot but keep them separate to be added into each serving. We followed other reviewers and added more red curry paste as well as just a little sweet thai chili sauce for heat/sweet.

Will definitely make it again. I would hafta agree with other reviews that it seemed to be missing something but adding some salt and extra green onion did the trick!

So delicious! I only used one serving last night so will use the leftover broth for more noodles tonight. Going to add boiled chicken this time. I added lots of spice and next time will double the liquid for 4 servings.

This soup is a beautiful balance of scent, taste, colour, and texture. I add sweet red pepper and matchstick carrots, and offer the option of pulled chicken.

The flavor is really nice. Perfect for those who want a little kick, but I wouldn’t call it spicy.
My only recommendation is to use 4oz of noodles or double the broth. I followed her tips about serving right after but I just think the noodles to broth ration was off
