- 1 white onion (finely sliced)
- 3 garlic cloves (crushed)
- 1 piece fresh ginger (about a thump size peeled and finely grated)
- 1 Tbsp. coconut oil
- 1 tofu
- 2 Tbsp. thai green curry paste
- 400 mL coco (Vita, Original Coconut Milk)
- 3 cups vegetable stock (depending on how creamy or runny you like it)
- 1 block firm tofu (about 280gr)
- 200 grams tenderstem broccoli (packchoi is another great option)
- 120 grams shiitake mushrooms
- 2 Tbsp. soy sauce
- 200 grams noodles (your choice – I have used rice noodles)
- 1 handful chopped coriander
- sesame seeds
- chilli flakes (or fresh chopped chilli)
- 2 spring onions (finely chopped)
