- 1 butternut squash (medium-sized, peeled, seeded, and cut into 1″ cubes, about 4 cups)
- 15 oz. coconut milk (divided)
- 1 lime
- 1/2 tsp. salt (plus more to taste)

- Sriracha (to taste, optional)
- 1/3 cup cilantro (chopped, to garnish, optional)

This soup is really easy to make. I bought the precut fresh butternut squash. I didn’t have curry, added chili garlic instead and used Wegmans Thai culinary stock instead of chicken broth. I don’t care for cilantro, so didn’t add that. The soup had a slight kick to it, but not too much, just right really. I liked the coconut milk taste and creamy texture. I will definitely make this again. Served it with a salad and a few refrigerator biscuits.

Absolutely delicious. Just enough heat to stimulate the palate, though mild enough for those that are spice sensitive. Make it in a crockpot if you can.

Found this same recipe another place. It was great good texture and taste. I just recommend activating the curry before mixing into the pot (place in warm pan and stir for 1-2 min until very fragrant). Kids loved it too!

Everyone enjoyed this. It had a great texture and taste. I’d highly recommend activating the curry in a pan by heating it up some prior to mixing it into everything to make it more fragrant and maybe even adding a touch of garam masala for another layer of flavor. But it was kid- approved. My 2 & 5 year old ate it up.

I made this recipe for my Book Club gathering. The one major change I made was to roast the butternut squash instead of boil. It saved time and labor- cut in half, Season with olive oil and salt, roast in oven at 400 for 35 min. I followed the rest of the recipe, and just scraped the squash into the pot- mashing it up as I stirred. Definitely had enough spice without the sriracha. Garnishing tips and Naan made a great meal that everyone loved! I will definitely make this again.
