Description
Richly seasoned meat, crunchy romaine and chips, and customizable toppings add up to a hearty main-dish salad you’ll want to put on repeat. It comes together quickly with the help of taco seasoning and spiced-up, store-bought ranch dressing. The recipe is a Yummly original created by Ashley Strickland Freeman.

- 6 cups romaine lettuce (coarsely chopped, from 1/2 a head of romaine)
- 1 pt. cherry tomatoes
- 2 small avocados
- 1 lb. ground beef (80/20 ground chuck)
- 1 pkg. taco seasoning mix (1 oz.)
- 2/3 cup water
- 15.5 oz. black beans (1 can)
- 1 cup ranch dressing
- 1 chipotle chiles in adobo sauce (from a 7-oz. can; minced)
- 1 tsp. adobo sauce (from the can; or more if you want it spicier)
- 2 Tbsp. chopped fresh cilantro (plus more for serving, if you like)
- 1 1/2 cups frozen corn (thawed)
- 1 cup shredded sharp cheddar cheese
- 6 oz. tortilla chips

Directions
- Prepare vegetables: Coarsely chop lettuce, halve cherry tomatoes, and pit, peel, and slice avocados. Set aside.
- Brown ground beef in a large frying pan over medium-high heat, stirring occasionally, 4-5 minutes. Add taco seasoning and 2/3 cup water (or amount suggested on taco seasoning package) and cook according to package directions, about 5 minutes.
- While beef cooks, drain and rinse black beans. In a small bowl, stir together ranch dressing, chipotle pepper, adobo sauce, and cilantro. Set ingredients aside.
- Divide lettuce among serving bowls or plates. Top with ground beef, tomatoes, avocados, black beans, corn, and cheese. Tuck in tortilla chips (serve some on the side if they don’t all fit). Drizzle with chipotle ranch dressing, sprinkle with more cilantro if you like, and serve immediately.
