Sweet and Sour Red Pepper Jam

Full of sweet and sour flavors, this Sweet and Sour Red Pepper Jam can be served on top of a slice of your favorite sourdough bread or on top of grilled or roasted meat or fish. Made from just four simple ingredients, red bell peppers, sugar, apple cider vinegar, and water, this jam is easily preserved for use on a later date. Follow the steps in the recipe to can this Sweet and Sour Red Pepper Jam. Agave syrup can be used instead of sugar, see ingredient list for adjustment in amount needed.
Ingredients
- 400 grams red bell peppers (roasted or packed naturally, peeled and chopped)
- 200 grams sugar (or 110 gr. agave syrup)
- 100 grams apple cider vinegar
- 50 grams water
Directions
- In a pot, add the bell peppers, sugar, vinegar, and water, and heat on medium heat. Simmer for 30 minutes.
- Optionally, at the end you can mash everything together for a less chunky texture.
- To can the jam, boil the glass containers 30 minutes, and then let them completely drain on a clean drainboard.
- Ladle the jam into the glasses, and add them back into the boiling water another 30 minutes making sure the water does not cover the top.
- Remove from water, add the lid, and place them upside down to cool.
