- 2 cloves garlic (finely minced)
- 1 medium carrot (very finely chopped)
- 2 oz. shiitake mushrooms (or button, very finely chopped)
- 2 Tbsp. chopped fresh cilantro
- 1 Tbsp. chopped fresh parsley
- 3 green onions (thinly sliced)
- 3/4 cup panko breadcrumbs
- 1/2 cup pineapple juice
- 1/2 cup ketchup
- 3 Tbsp. hoisin sauce
- 1 Tbsp. soy sauce
- 1/2 cup apple cider vinegar
- 2 drops oil (100% pure ginger, or 1 - 2 teaspoons fresh minced ginger)
- 3 Tbsp. brown sugar (adjust for your sweetness preference)
- 3 Tbsp. honey
- 2 tsp. cornstarch
- 1 red bell pepper (chopped into 3/4 inch squares)
- 8 oz. water chestnuts (can sliced)
- 6 oz. snow peas (or sugar snap peas)
- brown Jasmine rice (for serving)
- sesame seeds (for garnish, optional)

Delicious sauce with lots of flexibility to substitute vegetables that you have on hand. Worth the wait as my husband said.

It was very good, kids even loved it. I doubled the recipe and used ground turkey and sausage for the meatballs.
