I made it using chicken breast tenders, which fit 2 on a skewer. I also made twice as much sauce, and drizzled half on after cooking the chicken. It was a hit! The ginger + sriracha really went well together.

I make this often and it's always a hit! Instead of just chicken, I add bell peppers and pineapple chunks to the skewers. Serve it with cilantro lime rice for a delicious simple meal.
