Pretty easy to make, I followed the recipe, tried using the grater, that didn’t work out great, I have a small food processor, this worked really good. Strongly suggest to use something like this to chop the cauliflower. The salad is very tasty!

3rd time: subbed 2 packages of the broccoli-rice (from Costco) for the cauliflower, didn't have enough parsley, so I used 1/2 cilantro and 1/2 parsley. GREAT!
Just made this again ~ I used cauliflower, subbed 1 lime (and all it's zest) golden raisins & currants. I didn't have quite enough parsley, so I made up the 1/8 cup difference with cilantro. I used the processor to make this super easy.
Super easy - I used a blend of wild and black rice instead of the cauliflower, which took FOREVER (90 minutes) to cook. I also subbed 1 Mexican squash, because just 1 sweet potato wasn't enough. I also subbed orange zest for the lemon and did half cranberries and half golden raisins, as Keith can't have a lot of cranberry in his diet. He LOVES it!

Really good. Exactly the light dish I was going for. Ruined the gluten free aspect with a small piece of toasted bread... sue me ;)

Brilliant recipes.. and very easy to make.. can't wait to try it.. hopefully it turns out good.. my veggie patch has heaps of cauliflower growing.. will put it to test
