What a great idea! I needed a chicken dinner idea & this was it. Seared the chicken in my cast-iron skillet & put onion, julienned carrots & fresh corn all around the pan right before putting it in the oven. It soaked up the delicious juices of the chicken & was amazing! I would def cook it at 375F instead of 400F like I did - my chicken breasts were thick but got slightly dried out at 400F for 30 mins. Def going in the rotation!

I used goat cheese instead of feta and it was great. I seared on the stove then finished in the air fryer ... Too hot to turn on the oven. Everything was great and will be adding this to my regular dinner rotation

This recipe is a keeper! We seasoned the chicken with salt and pepper. Instead of layering the ingredients, we mixed them all in a bowl and used the dressing as a binder. Seared the chicken on both sides on the stove, then finished in the oven. 375° for about 25min. A few minutes before it was done I put some dressing on top of the chicken and a light sprinkle of mozzarella cheese. Delicious!

Chicken came out AMAZING! Made it last min. Added bacon bits for a little surprise. Let the chicken start off on skillet for a few mins (5 mins) to brown the outsides, then baked it at 375 for 25 mins. The last 3 mins I added extra dressing on top of chicken and more mozzarella cheese and it came out JUICY, FLAVORFUL, and DELICIOUS! 10/10 would recommend.

We all really liked this dish. Chicken was moist and the sundried tomatoes really added to the flavor. We love spinach so we used twice as much as it called for and sautéed the rest and put it on the chicken. Will definitely make again.

Marinated the chicken overnight in the dressing and mixed the stuffing together prior to putting it into the chicken and IT WAS DELICIOUS. I will be making this again and recommend it to anyone else looking for something fancy to add to their monthly rotations.

Loved it! If you love Italian flavours, the rich taste of sun dried tomatoes, and the saltiness of feta, you will love the melding of these easy ingredients. I recommend tossing the stuffing items in a bowl with a small bit of the dressing, it will easier to stuff the chicken. I baked it at 400 for 30 minutes and it was perfect. Delicious!

Tasted amazing, however I just cut the chicken in half, seared it then used the tomatoes/cheese/spinach as a topping then broiled. (Thats the condensed version lol)

It was so good!!!! We even marinated the chicken for a really long time and it came out amazing. Just baked it though but it was still good

Nice recipe! Looks and tastes ‘fancy’ without a full day in the kitchen.

As a very inexperienced cook, this was an easy recipe and any faults were based on lack of skill (I cut through the chicken a little). I did it without the dressing and instead just did the salt, pepper, and olive oil on the outside. Tasted great!

Amazing! Great simple recipe with a ton of flavor! Fam would definitely like to have again😁

The chicken was deliciously moist and full of flavor. I .started cooking the chicken slowly in the oven and finished on the grill to lightly brown all sides. I added a little chopped bacon to the spinach, sun-dried tomato mixture - amazing 😋

Turned out great! Didn't have a cast iron skillet, but transferred it to a casserole dish to finish off in the oven.

Good. I didn’t have the vinaigrette so I think that is why it was a little blah I have made something similar with pork which had more flavor. I’m going to try again with vinaigrette

My local grocer didn't even have sun dried tomatoes and this was still very tasty! The marinade is to die for.

The fam loved it! I used Feta and Mozzarella inside, and Swiss on the outside. Also let it marinate for and hour and tenderized.

So good. I made it tonight for dinner. I also chopped up the spinach and sundried tomatoes and mixed it with Mediterranean feta and shredded mozzarella. I also browned the outsides of the chicken before stuffing and folding the chicken. I used toothpicks to close and finished it in the oven at 375 for 30 minutes. I added a 1/4 cup of chicken broth to the bottom of my cast iron skillet to keep the chicken moist while it was cooking. It was a hit!

This is yummy. Made it per the instructions the first time, and made some minor changes the second time:
Instead of layering the stuffing ingredients, I chopped up the spinach, sundried tomatoes, and added some chopped basil - mixed it all together with the remaining ingredients; then stuffed the chicken breasts. Served with baked sweet potatoes...wonderful!

Excellent! I put a lid on the chicken as it seared and the chicken cooked more so I didn't have to put it in the oven. So easy and it tasted and looked like it spent hours.

Mmm I loved it! And it wasn't much work either. I combined the chicken with a salat of raw spinach and the leftovers of the feta.
