- 6 oz. chicken breasts
- 1 cup basil
- 1 cup spinach
- 1/4 cup red onion (diced)
- 1/4 cup yellow onion (diced)
- 1/2 cup green onion (chopped)
- 1/8 cup roasted garlic (diced)
- 1/4 cup dried tomatoes (oven, diced)
- 1/4 cup Parmesan cheese

Directions
- Preheat oven to 325 degrees.
- Butterfly the chicken breast by thinly cutting breast in half, but not all the way through, to create a pocket. Butcher can do this for you, if needed.
- Dice the onions and oven dried tomatoes. Rough chop the basil and spinach. Dice the roasted garlic in small pieces. In a mixing bowl, add all the ingredients except for the chicken, and mix together.
- Stuff each chicken breast with equal parts filling.
- Spray a sheet pan with non-stick cooking spray, place the chicken on the pan. Bake chicken for 25 minutes or until it is fully cooked.
