- 1/2 cup coconut milk (well-shaken)
- 1 cup frozen strawberries
- 1/2 cup red beet (peeled, cubed and cooked, chilled)
- 1/2 cup fresh orange juice
- 1 tsp. honey (optional)
- 6 ice cubes

Directions
- In order, combine coconut milk, strawberries, beet, orange juice, honey (if desired) and ice in blender jar of KitchenAid® Pro Line® Blender. Secure lid and set blender to Smoothie setting. Blend until machine turns itself off.
- Alternatively, combine ingredients in blender as directed, secure lid and turn dial to Speed 1. Slowly increase speed to high (Speed 10 or 11). Blend until completely smooth, about 1 minute. If necessary, scrape down sides of jar with Flex Edge tamper.
- Smoothie is best if served right away.
- Chef’s Tip: To cook beets on your own, peel and cube a beet and boil until tender, then drain and refrigerate until well chilled before using. Precooked red beets can also be located in the salad section of your supermarket.
