Didn't have strawberries, so I added only 1 c oats (rather than and not in addition to 1 1/2 c), 1/4 c cocoa powder, ~1 tbsp ground flaxseed, and ~1/4 c soy milk. Then for extra decadence, I pulsed in some dates. Oh yeah, and I added a teaspoon of baking powder for more loft since the OP noted hers were dense.
Not sure if it's really the same recipe anymore, but holy cow! Very rich and yummy. You just need one to satisfy a sweet tooth/chocolate craving. Love that there's no refined sugar or oil, and I'm not seeing the moisture problems some complained about in the comments on the post.
Successful "healthy" muffin bake!
EDIT: Oh, oops, there is maple syrup in these. But 1 tbsp is not much. Could even be omitted with the dates.
