Description
This sweet yeast loaf is light in texture and is accompanied by a beautiful crisp crust. Instructions for the preparation of this yeast loaf are for a stand mixer. This bread is a free form bread, meaning it is not made in a loaf tin. Leave at least an hour for the bread to rise after shaping before baking to get an airy texture on the inside. You will know your bread is done baking when the bottom sounds hollow when tapped.

- 3 eggs (beaten)
- 1 pinch salt
- 250 grams bread flour
- 75 grams butter
- 25 grams sugar
- 1 tsp. dry active yeast (instant)
- 1 egg yolk (beaten for basting)
- 1 handful nuts (your choice)
- cane sugar (or brown sugar)

Directions
- In a stand mixer, add the 3 whole eggs, pinch of salt, and the bread flour, butter, sugar, and yeast. Connect the bread attachment and let it start kneading the dough until elastic and smooth.
- Pour the dough out onto a baking tray lined with parchment paper. Roughly form it into a large oval shape.
- Baste the top and sides with the beaten egg yolk. Sprinkle the handful of nuts and a generous amount of sugar on top (optional). Let rise for 1 hour.
- Preheat the oven to 180 degrees Celsius.
- Bake the dough for 20 minutes or until it sounds hollow when tapped on top.
