Description
This easy, cheesy quiche is a great way to sneak some greens onto the brunch table! The recipe is a Yummly original created by Sara Mellas.

- frozen pie crust
- 1 Tbsp. extra-virgin olive oil
- 4 oz. baby spinach
- 4 large eggs
- 3/4 cup whole milk
- 1/4 cup heavy cream
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 2 oz. low moisture mozzarella cheese (shredded, 2 oz. is about 1/2 cup)
- 2 oz. grated Parmesan cheese (2 oz. is about 1/2 cup)

Directions
- Preheat the oven to 400°F. Move a rack to the lowest position in the oven.
- Poke the bottom of the frozen pie shell several times with a fork, and transfer to a baking sheet.
- Bake the pie shell on bottom rack of oven until the bottom is slightly puffed, 12-14 minutes, or according to package directions. When done, remove from oven and set aside.

5 stars I only put in some chilly peppers Ground because my husband loves things with a little extra kick .

Very good, but I added a little bit too much spinach, otherwise, delicious. Sautéed some yellow onions with the spinach to give more flavor
