- 1/2 boneless, skinless chicken breast
- 1 1/2 cups spinach (washed and torn)
- 2 Tbsp. corn kernels (cooked)
- 1 tomato (chopped)
- 1/4 avocado
- 2 Tbsp. goat cheese
- 1/2 tsp. Dijon mustard
- 1 Tbsp. rice vinegar
- salt
- ground black pepper
- 1 Tbsp. olive oil

Directions
- Saute or grill the chicken in a pan on medium heat until it is done. Set aside and allow to cool for 5 minutes. Cut the chicken into cubes and add to a bowl.
- Add the spinach, corn, tomato, avocado, and cheese to a bowl and toss well.
- Add the mustard, vinegar, and a pinch of salt and black pepper to a small bowl and mix well. Slowly drizzle the oil into the bowl, whisking as you do,
- Arrange the salad on a plate, pour the dressing onto the salad, and serve.
