Description
This versatile dish is packed with fresh vegetables—shiitake, bok choy, red pepper, and snow peas—making it a perfect one-dish dinner. You can swap springy Chinese lo mein or chow mein noodles for the thin spaghetti here, and you can add any other vegetables that you like. The recipe is a Yummly original created by Tina Ujlaki.

- 12 oz. thin spaghetti
- salt (for noodles)
- 1 Tbsp. vegetable oil (for noodles)
- 1 cup low sodium chicken broth
- 1/3 cup reduced sodium soy sauce
- 1/4 cup shaoxing (Chinese cooking wine; or use dry sherry)
- 2 Tbsp. chili bean sauce (or more if you want it spicier)
- 4 tsp. sugar
- 2 tsp. cornstarch
- 6 oz. fresh shiitake mushrooms
- 1/2 lb. baby bok choy
- 1 red bell pepper
- 1 Tbsp. minced fresh ginger
- 2 tsp. minced garlic
- 3 cups snow peas
- 2 Tbsp. vegetable oil (for shrimp)
- 1 1/2 lb. large peeled, deveined shrimp (16-20 per lb., or smaller)
- 1/2 tsp. salt (for shrimp)
- 1/2 tsp. freshly ground black pepper
- 1 Tbsp. vegetable oil (if needed, for vegetables)
- 3 scallions

Directions
- Bring a large pot of salted water to a boil. Add the spaghetti and cook until almost al dente, about 6 minutes. Drain, return to pot, and toss with the oil. Set aside.
- Combine the chicken broth, soy sauce, Shaoxing, chili bean sauce, sugar, and cornstarch in a small mixing bowl, whisking well to dissolve the sugar and cornstarch. Set aside.
- Discard stems from the shiitakes and slice caps 1/3-inch thick. Slice the bok choy crosswise 1/2-inch thick. Core and cut the red pepper into thin strips. Peel the ginger, then mince ginger and garlic. Remove strings from the snow peas (snap at stem end, then sharply pull the string from the straight side). Thinly slice the snow peas lengthwise. Set vegetables aside.
