- 2 sweet potatoes (about 2 pounds)
- 1 large egg
- 3/4 cup Parmesan cheese (shredded, divided)
- 1/3 cup seasoned breadcrumbs
- 1/4 cup fresh parsley (chopped, plus more for garnish)
- 1 Tbsp. dried sage (rubbed)
- 2 tsp. red pepper flakes
- 1 1/2 tsp. salt (divided)
- 1/4 cup vegetable oil (divided)
- 1 lb. rigatoni
- 3/4 cup milk (or more as needed)
- 4 Tbsp. butter
- 1/2 sweet onion (diced)
- 3 cloves garlic (minced)
- 1 Tbsp. flour
- 3/4 tsp. black pepper
- 1/8 tsp. ground nutmeg

Directions
- Preheat the oven to 425 degrees F.
- Bake the sweet potatoes until tender, 50 to 60 minutes.
- Meanwhile, in a large bowl combine the ground pork, egg, 1/2 cup of cheese, breadcrumbs, parsley, sage, red pepper flakes and 1/2 teaspoon salt. Form the mixture into golf ball-sized meatballs, arranging them on a plate or platter.

sorry was not impressed .. the sauce was much to thick not a lot of taste..by adding more milk to thin it out.. it eventually lost all taste
