- 1/2 tsp. salt
- 3 Tbsp. oil (vegetable, canola, coconut)
- 1 1/2 cups shiitake mushrooms (sliced, button or baby bellas work too)
- 1 cup white onions (large dice)
- 1 1/2 Tbsp. minced garlic (EACH:, AND grated ginger, ginger paste is fine too)
- 3 Tbsp. low sodium soy sauce (use GF tamari to make this gluten-free)
- 2 tsp. chili oil
- 1 Tbsp. toasted sesame oil
- 2 Tbsp. peanut butter

It looked awful, but tasted delicious. I'll tweak the instructions next time to drain the pan once the mushrooms cook.

Really yummy! I love how the tofu turned out. I made a few changes, just based on what I had on hand: Sriracha instead of chilli oil, almond butter instead of peanut butter, and a bag of frozen stir fry vegetables. Topped it off with sesame seeds, green onions and chopped peanuts.

I reduced the sugar, still learning how to work with the tofu but overall and excellent recipe. I highly recommend!
