- 6 oz. tomato paste
- 4 cups beef broth (can substitute chicken broth)
- paprika (sweet or spicy, I used sweet)
- Italian seasoning (blend, or a combination of oregano, basil, and marjoram)
- pepper jack cheese
- uncooked macaroni (or other small pasta)
- 1 large onion (diced)
- 1 lb. ground beef (lean)
- 1/2 tsp. salt (more to taste)
- 1/2 tsp. black pepper
- 1 can rotel (14.5 ounces, undrained)
- 6 oz. tomato paste
- 3 cups macaroni (uncooked, or other small pasta)
- 4 cups beef broth (or stock, can also use chicken)
- 2 Tbsp. paprika (sweet or smoked, smoked will be spicier)
- 1 tsp. oregano
- 1 tsp. marjoram
- 1 tsp. basil
- 2 cups pepper jack cheese (shredded, or cheddar)

Delicious! I seasoned it according to the recipe, but also to my family’s taste. We like spice, so I added a little crushed red pepper for heat. And also some minced garlic with the ground beef and onion just for added savory flavor. I didn’t have pepper Jack so I used Colby Jack and it was still great. My family all ate seconds. It makes a lot, so even after 5 servings there were still left overs. My only complaint is that I felt that 3 cups of uncooked macaroni was too much pasta to meat ratio. When I make it again I’ll probably go with just 2 cups of macaroni. But overall, very pleased with this recipe!

Texture was good and I liked the pepper jack topping, but too heavy on paprika for me.
