- 1 Tbsp. salt
- 2 1/2 herbs (fresh, for the rub, i use a combination of fresh marjoram and thyme; you could use rosemary and sage, or your favorites 2-3 thick sprigs of each for a small bird, and 5-6 for a large one)
- white wine (one glass for the bird, one for you)

Turkey came out perfect, crispy skin and juicy. My first time butterflying a turkey and I will do it again. 15lbs turkey cooked in just under 3hrs.
