Overall, pretty good, but I made some changes. I had to omit the peppers because they sadly don’t agree with me. I used a can of diced tomatoes rather than salsa because it’s what I had and I would bet it worked just as well. I also used brown rice (personal preference), but I precooked it in my instant pot (not totally cooked) to cut back on the cooking time in the recipe. If I didn’t do that it would have taken forever and a lot of liquid.

Very good! I added approximately an additional 1/2 cup of broth and 1/4 cup of salsa and cooked for approximately 35 minutes. Turned out great!

Tasted so good with stuffed poblano peppers. Stayed with the recipe and was great.

Nice easy rice dish. Filling. Used basmati rice and followed the direction with just a quarter cup more of the broth. Slightly overcooked the rice, so next time I should keep to the instructions and lower the fire a bit more. Exclude salt given some are trying to cut back, but think it would be better to cook it with some salt vs without and have to add in later. Smoked paprika was ok for this recipe. Not overpowering
