Description
Smoked Gouda and bacon give this tender, juicy meatloaf a deep smoky flavor, making as good for dinner as it is sliced on a sandwich day two.
Ingredients

- 1 lb. ground beef
- 1 lb. ground pork
- 2 large eggs
- 1/2 Spanish onion (large, diced into 1/4")
- 2 cloves garlic (out through garlic press, or minced fine)
- 6 oz. bacon (thick sliced is best)
- 6 oz. smoked gouda (grated)
- 1/2 cup breadcrumbs
- ketchup (or barbecue sauce to brush o top)
- salt

Directions
- Preheat oven to 350F Cook bacon in a pan until crisp and set aside to cool Reduce heat and in the same pan cook the onions and garlic until soft but not brown 5-7 minutes. Drain on paper towels
- In a large bowl or mixer (using paddle attachment on low speed) combine meat and onion mixture until just combined. Turn off mixer after each step so you don't over-handle the meat.
- Add eggs one at a time then add salt and pepper and the remaining ingredients (except sauce) To test the meatloaf for flavor and seasoning make a small patty and cook on the stove. taste to see if meatloaf needs salt and/or pepper.
- Form the meat into a loaf on a greased or foil lined pan. Brush the top with sauce and bake for 30 minutes. Remove from oven and brush on a second layer of sauce and bake an additional 30 minutes, or until the internal temperature reaches 160F. Let sit loosely covered to 10-15 minutes before cutting.
