Very easy and looks pretty but warm avocado is... hmm.. just not my thing, I guess.
I might try this again with fresh (uncooked) avocado, raw egg yolks and salmon,. Will look just as pretty and probably taste a whole lot better... Or just turn this into a salad with a poached egg, avocado and salmon...

Made it for my pescetarian friends.
used smoked Maine brook trout instead of salmon. Yum.

This did not go well for me.
1: no instruction on how to smoke the salmon
2: the avocado fall over when in the oven, spilling eggs EVERYWHERE
3: you need massive avocados to do it how described in the recipe.
How I made it work
1: Baked empty avacado halves
2: baked salmon
3: poached eggs
4: constructed everything separately
After all that, it was super good and I’ll defiantly make this again. I did not use the chili flakes.

it didnt say to peal avocados, so i didnt. i think its a mistake. took me some time to peel it afterwards, i didnt want to eat it whole. next time i'll try to peel it before cooking.

I love this!! I just made this this morning as I had all the stuff except for fresh dill. I used dried dill instead from my spice rack and skipped the chili flakes this time. Absolutely delicious! I did have a hard time getting much in the way of egg whites in the avocados, spilling a lot of egg white out as I tried! I’ll scoop a little more avocado out next time, but I’d rather sacrifice some egg white than too much avocado.

The only good part of this recipe was the smoked salmon, and cooking the avocados totally ruins their flavor in my opinion. At first glance it looks like a good recipe but it really doesn't taste all that great.

Great concept - but the final result wasn't great. Smoked salmon tasted too salty and the eggs spilled out. This recipe would work if the avocados were extra large and the egg yolks are extra small.

Hate to write anything bad on a review, I've never written a letter to the editor or to a company about service or a product, however, we did not enjoy the final result. First, the smell that infused the kitchen while it was cooking was not good. I had hoped it would taste better than it smelled. Unfortunately, it did not. Unlike the author, we both did not like the warm avacado. The cooked eggs were inconsistent, as some of the yokes were overcooked and the whites were undercooked . This could be caused by the different sizes of individual avacados and the amount scooped out. The salmon turned out dry on the edges and didnt really add as we expected. I love avacados, salmon, and eggs, just not together in this combination

My family loved this. Super easy to make and they look so fancy :) At first I was worried about scooping out too much of the avocado to make room for the other ingredients. But, it actually tastes better that way as the avocado is then in better proportion to the other ingredients. You can also save the scooped out portion if you really want more avocado. These are great with some simple toast on the side!

My husband really did not like the combo of salmon and avocado, I was not fond of the warm avocado. I found that the length of cooking did cook the yolk too hard on a couple of servings. I liked the idea of this dish but it did not do what I had hoped. If I did it again I would adjust the cooking time for soft cook on the yolk, might even do a soft boil on the egg to a room temp avocado and salmon. Again the thought was great but adjustments for me would have to be made.

This was delicious! It took me past my love of eggs benedict, into a whole new level.
Applewood bacon bits sprinkled on top gave my tongue the BIG "O"!!
