this is one of my family's favorite recipes. i use mexican rice (recipe from life in the lofthouse), and serve with more rice and some refried beans, and top the peppers with sour cream, cheese, and sometimes guacamole.
theyre very filling so most people only need one pepper. also good as leftovers.

My family loved this dish! I used medium heat enchilada sauce and set out all of the toppings recommended. Everyone used what they preferred & commented on the good flavor. I just bought the ingredients to make it again :-)

This is a delicious recipe. I cooked it in my instant pot for 10 minutes and natural pressure release. I used additional enchilada sauce and 1/2 cup water because pressure cookers require a minimum amount of liquid. I will definitely make this again. Next time I will try 8 minutes because the peppers were a little softer than I like. In addition to the suggested toppings, I sprinkled on a little Tajin. Yum! I ended up with 5 peppers and about 2 cups cooking liquid. Since I am cooking for 2 I plan to use the extra pepper and the cooking liquid to make soup. Easy recipe and 3 meals. Winner!

Turned out good. I over cooked peppers but that was my fault. I would say 4 hours on low (I did high and too much). I also added chorizo to my beef mixture, used a bag of 90 second original rice and added salsa on top. Delicious everyone ate them!!

The filling tasted pretty good, but I would double the amount of seasoning. However, the pepper was mushy and gross! I’ve made stuffed peppers in the oven many times and they have never disintegrated like that. The pepper was like mush with a plasticy skin stuck to it. I would recommend trying this recipe in the oven.

We really enjoyed this mix. We had some of the mix left and put it in tortilla shells the next day. We will definitely be making this again.

Turned out really well and were very easy. Peppers got a bit too soft but still tasted good!

They turned out great and will definately make again. I altered recipe a little by adding extra cup of rice as well as more than 1 cup of corn and beans. Filling is great in burritos too!

I didnt add corn because I'm not a fan. I mixed 1/2 ground beef and 1/2 ground turkey. I also added some thinly sliced purple onions and green onions. It was a hit with the family

Really good baked in the oven at 350 for 45 min ... cheddar cheese on top because didn't have Mexican cheese.

Made these for dinner tonight. Turned out great! Kids loved them and they were easy to make. Will definitely make again!!
Edit: I have made these several times over the past few months and these are always a winner. One of my favorite recipes!

Loved this one. If I don't use all the filling, I freeze and use it later for either peppers or even squash.

This was absolutely delicious! My kids loved it and for my picky eater, he just used the pepper as his bowl and ate the filling. Such an easy recipe, hardly any prep time at all. I modified it by picking up a package of microwave Mexican rice (2 serving packet) because we don't make rice that often. The only problem is that I could only fit 6 peppers in my crock pot and I would consider making even more bc it was so good!
