- 1 cup onion (sliced)
- 6 garlic cloves (crushed)
- 1/4 cup shawarma seasoning (store bought or use recipe below)
- 3 Tbsp. extra-virgin olive oil
- 1 Tbsp. ground coriander
- 1 Tbsp. cumin
- 2 tsp. paprika
- 2 tsp. turmeric
- 1/4 tsp. ground cinnamon
- 1/8 tsp. ground cloves
- 1/2 tsp. sugar
- 1 tsp. cayenne pepper (optional for a bit of a kick)
- 1 tsp. salt
- 1/2 cup tahini paste
- 1/2 cup water
- 1/4 cup lemon juice
- 1/2 cup fresh parsley (or cilantro, or a mix of both)
- 1 pinch salt (and pepper, to taste)
- 1/2 tsp. cumin
- 1 tsp. sumac powder (ground, optional)
